Pelayo, who has over 20 years of culinary experience, is expected to update the popular restaurant's menu, which will feature flavors and essences of the chile, while holding on to several tried and true favorites. "People are being more and more selective about their dining options. Patrons do not like saturated fat, or harmful oils. Nevertheless, our responsibility is to continue preparing classical dishes with great flavor, while implementing new styles," emphasized the chef.
