Three well known local restauranteurs, Luis Fitch, Paolo Marian, and Stefano Santini, recently launched two new culinary projects to the media: Cevicheria Xalisco and Wine Store. Cevicheria Xalisco is directed to local people who like ceviche, a citrus marinated seafud salad popular in Mexico, but believed to have been developed in Peru's northern coast. The popularity of ceviche spread internationally in the latter part of the 20th century, and is now a significant part of Mexico's cuisine. Aside from ceviche, they will offer fresh oysters at very accessible prices. Wine Store will feature a wine cellar with an extensive selection from several countries including Argentina, Chile, France, Italy, Mexico, Spain, and United States. Sommeliers will offer recommendations and tastings to help you to choose the best options.

Luis Fitch also disclosed Los Xitomates' new address at Morelos 601, two blocks away from the previous location. This new spot will be elegant and sober, decorated with art by acclaimed Mexican artists, while high-end Mexican cuisine menu designed by Fitch and Chavez won’t have any changes.
