Nopal tortillas are a pleasing light green color, with a subtle but delicious flavor. Maiz azul, or blue corn, tortillas are a dark blue color. Chipotles are smoke-dried peppers, usually made from jalapeños, with a mild, yet earthy, spiciness. These tortillas have a distinct chipotle flavor and light rusty orange color.
